We provide salmon that retains the taste and texture of fresh fish by freezing processed fish through a preservation technique known as ikejime.

TRUFRESH is a patented technology developed in the United States to transport fresh fish. Vacuum-packaged salmon is immersed into a patented brine formulation and instantly cooled at -40°C. The salmon is evenly frozen, immediately stopping functions in all cells and preventing damage. When thawed, the brine absorbs the heat from the salmon and minimizes damage at this stage. The TRUFRESH method retains the aroma, texture, color and taste of fresh salmon.

J-Trading is the only official agent of TRUFRESH in Japan and imports Norway salmon into Japan using the TRUFRESH method.

TRUFRESH makes it possible to restore frozen lobsters to life when thawed.

On March 16, 2004, CNN reported that according to a Connecticut company, six of 100 lobsters frozen using the TRUFRESH method revived when thawed. This occurred because TRUFRESH allows for quick-freezing of fish processed with the ikejime preservation technique, without destroying cellular structures. This report attests to the remarkable degree of freshness maintained through the use of TRUFRESH technology.
